But Audiorealism is better as I experienced. Tau is only good for acid sawtooth basses...

The only thing you can really automate is the patterns, since they are pre-programmed in the vst. Audiorealism Bassline is more like a tb303 with a built in Matrix Pattern Sequencer to make basslines. It's not my most favorite bass vst...

No, I guess he does it the same way like you with VST. He writes the melody in the piano roll editor and connects that channel with his hardware synth. The synth sends then his signal with the sounds or whatever it is =)
He only can't switch the presets as fast as you with VST. The second problem would be the using several times the same synth but with different sound.
It's very, very easy to do it.
